ICEBOX CAKE

Icebox cake is a no-bake dessert that requires essentially no cooking or baking but nevertheless produces slices that resemble soft cake layers filled with light whipped cream and seasonal fruit. You don't even need a recipe; just come learn how to make one.

As I've already mentioned, I come from a large family, therefore everything was done on a greater size in the kitchen. Desserts were never baked in pans smaller than 9 x 13 inches; we valued simple, substantial recipes.

Why do people like Icebox cake

My mother and grandmother taught me how to make icebox cakes because they both routinely made them for large gatherings. And why not? They are extremely simple and feed a lot of people. Whipping cream, fruit slices, and entire graham crackers (or any crisp, non-sweet cookie) are simply layered on top of each other. No baking is necessary.

It might sound strange, but crunchy Graham Crackers? The cake is not here. But that's precisely the icebox cake's ingenuity. The crackers soften just enough in the refrigerator to become supple and flaky, blending with the cream and fruit to create a dessert that resembles an elegant layered torte with thin layers of cake.

Ingredients that go into Icebox cake

  • 3 cups heavy whipping cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 (9 ounce) package chocolate wafer cookies

How to bake Icebox cake

  1. Place the stand mixer's bowl and whisk attachment in the freezer for ten minutes. Take out of the freezer. Whip the cream mixture with the sugar and vanilla essence until soft peaks form.
  2. Wrap plastic wrap around the loaf pan's interior. Whipping cream should be applied in a thin layer at the bottom.
  3. On the pan's two short sides, place a cookie. Place 3 cookies on the opposite edges of the pan, spaced equally apart. The cookies should be spread with whipped cream, stacked, and then arranged in three rows in the pan. You'll need a minimum of 9 and a maximum of 11 cookies each row.
  4. Cookies should be covered in whipped cream and plastic wrap. Place in the fridge overnight or for at least four hours. Keep the remaining cream in the bowl covered.
  5. Remove the plastic wrap from the cake, turn it out onto a platter, and top with the remaining whipped cream. For 30 minutes or until hardened, place in freezer.
  6. Slice while still frozen and serve warm. Wrapped leftovers should be kept in the freezer or fridge.

Best ways to enjoy a Icebox cake

An icebox cake is among the easiest sweets to make. (Okay, we see you. Sugar cookies with 3 ingredients.) You're practically done if you can whip cream! Add 1 to 2 teaspoons of cocoa powder to the whipped cream recipe to make a chocolate version. Alternatives include making vanilla instead of chocolate cookies, adding 2 teaspoons of citrus zest to the whipped cream, or making a peanut butter icebox variant. Because they can soften evenly throughout, Oreo Thins make a terrific base for cookies, but if you only have standard Oreos on hand, those will serve the same purpose.
