- 1 cup butter, softened

How to bake Hummingbird cake
Step 1
Make the layers of the cake: Set the oven to 350°F. In a large bowl, whisk together the flour, sugar, salt, baking soda, and cinnamon. Add the eggs and oil, and stir just until the dry ingredients are moistened. Vanilla, pineapple, bananas, and toasted nuts are all stirred in.
Step 2
Distribute the batter among three 9-inch round cake pans that have been floured and well-greased with shortening.
Step 3
Bake in a preheated oven for 25 to 30 minutes, or until a wooden pick inserted in the centre comes out clean. Ten minutes of cooling in pans on wire racks. To cool completely, transfer from pans to wire racks and wait an hour or more.
Step 4
Cream cheese and butter should be combined with an electric mixer on medium-low speed to create the cream cheese frosting. Add the powdered sugar gradually, mixing each addition in well at moderate speed. Add vanilla and stir. Increase the speed to medium-high, and beat for 1 to 2 minutes, or until fluffy.
Step 5
Put the first layer of cake on a serving tray and cover with 1 cup of frosting to assemble the cake. Add the second layer on top, then add 1 cup of icing. Add the third layer on top, then cover the top and edges of the cake with the remaining frosting. Place pecan halves in a circular pattern on top of the cake.
