Hummingbird Cake was first submitted to Southern Living in 1978 by Mrs. L.H. Wiggins of Greensboro, North Carolina, we had no clue it would go on to become our most well-known and cherished Southern cake recipe ever. With its three luscious layers, cream cheese icing, and nuts on top, the cake is undoubtedly beautiful, but it's the flavour that keeps us coming back for more.

This dish stands out because it adheres to a few key success principles. To begin with, vegetable oil is used in place of butter to give the layers a moist, quick-bread-like texture. In the original recipe, which is stated below, 1 1/2 cups of oil are required. As cooking styles changed over the years, we republished the recipe numerous times and changed the amount of oil and sodium specified in the ingredient list. However, the final product's quality was never compromised.

Cake Layers

  • 3 cups all-purpose flour, plus more for pans
  • 2 cups sugar
  • 1 teaspoon table salt
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 3 large eggs, lightly beaten
  • 1 ½ cups vegetable oil
  • 1 ½ teaspoons vanilla extract
  • 1 (8-oz.) can crushed pineapple in juice, undrained (such as Publix Crushed Pineapple in Pineapple Juice)
  • 2 cups chopped bananas (about 4 medium bananas)
  • 1 cup chopped pecans, toasted
  • Vegetable shortening

Cream Cheese Frosting

  • 2 (8-oz.) packages cream cheese, softened
  • 1 cup butter, softened
  • 2 (16-oz.) packages powdered sugar
  • 2 teaspoons vanilla extract

Additional Ingredient

  • 1 cup pecan halves, toasted

 

How to bake Hummingbird cake

Step 1

Make the layers of the cake: Set the oven to 350°F. In a large bowl, whisk together the flour, sugar, salt, baking soda, and cinnamon. Add the eggs and oil, and stir just until the dry ingredients are moistened. Vanilla, pineapple, bananas, and toasted nuts are all stirred in.

Step 2

Distribute the batter among three 9-inch round cake pans that have been floured and well-greased with shortening.

Bake in a preheated oven for 25 to 30 minutes, or until a wooden pick inserted in the centre comes out clean. Ten minutes of cooling in pans on wire racks. To cool completely, transfer from pans to wire racks and wait an hour or more.

Step 4

Cream cheese and butter should be combined with an electric mixer on medium-low speed to create the cream cheese frosting. Add the powdered sugar gradually, mixing each addition in well at moderate speed. Add vanilla and stir. Increase the speed to medium-high, and beat for 1 to 2 minutes, or until fluffy.

Step 5

Put the first layer of cake on a serving tray and cover with 1 cup of frosting to assemble the cake. Add the second layer on top, then add 1 cup of icing. Add the third layer on top, then cover the top and edges of the cake with the remaining frosting. Place pecan halves in a circular pattern on top of the cake.
