- 8 tablespoons (113g) unsalted butter, room temperature
- 3/4 cup (149g) granulated sugar
- 1/4 teaspoon salt
- 1 to 2 teaspoons espresso powder, optional
- 1 teaspoon King Arthur Pure Vanilla Extract, optional
3 large eggs - 1/2 cup (43g) Dutch-process cocoa
Glaze
- 1 cup (170g) semisweet chocolate chips or bittersweet chocolate chips
- 1/2 cup (113g) heavy cream
How to bake Flourless chocolate cake
- Turn the oven on to 375°F. Cut a piece of paper to fit, oil it, and place it in the bottom of an 8" round metal cake pan. See "tips" below.
- Making the cake: Heat the chocolate chips and butter in a microwave-safe bowl until the butter has completely melted. Reheating for a little time if required, stir until the chips melt. This may also be done over a burner with a very low heat setting. Add the melted butter and chocolate to a mixing bowl.
- Add the sugar, salt, vanilla, and espresso powder. A teaspoon of espresso will just improve the flavor of chocolate, while two teaspoons will give the cake a hint of mocha. Espresso enhances chocolate's flavor similarly to how vanilla does.
- Add the eggs and beat just long enough to get smooth. Just blend after adding the chocolate powder.
- In the preheated pan, pour the batter.
- After 25 minutes of baking, the cake should have a thin crust on top and a center instant-read thermometer reading of at least 200°F.After removing it from the oven, let it cool for five minutes in the pan.
- With the help of a table knife or nylon spreader, loosen the pan's edges and turn it out onto a serving platter. It's okay that the top will now be on the bottom. Additionally, the edges will slightly crumble, which is acceptable. Before coating, let the cake cool fully.
- Making the glaze Put the chocolate in a heat-resistant dish. The cream should be heated until it is just beginning to simmer and has small bubbles on the edge. After quickly stirring to mix, pour the cream over the chocolate and let stand for five minutes. Re-stir the glaze, first gently, then quickly, until the chocolate is melted and perfectly smooth.
- Reheat the mixture briefly in the microwave or over a flame if any chocolate chunks are still present, then stir until smooth.
- Spread the glaze over the cake and let it drop a little bit over the sides. Prior to slicing the cake, give the glaze time to set.
