Devil's Food Cake is an American classic. It is most likely the most "chocolatey" of the chocolate cakes due to its nearly black color. A cake with an exquisitely soft texture that is dense and moist goes perfectly with that rich chocolate flavor. Although no one is certain how it came to be known as "Devil's" Food Cake, one theory is that it is simply too sinful to eat. Others claim that it is because it contrasts sharply with the delicate, white Angel Food Cake. We do know that this cake's recipes first appeared around 1900.

The rich, "fudgy" flavor of this cake is derived from the use of unsweetened cocoa powder. Dutch-processed or natural unsweetened cocoa powder are both acceptable (alkalized). Just keep in mind that your chocolate cake's flavor and color will vary depending on the type and brand of unsweetened cocoa powder you use. To bring out the full flavor of the cocoa powder, we first dissolve it in either very hot coffee or boiling water before adding it to the cake mixture. Because it contains both butter and oil, this cake is a little unique. The addition of oil, in addition to the butter, has the advantage of maintaining the cake's softness even after refrigeration. Vegetables, canola, corn, safflower, or even a light olive oil are all suitable options when it comes to the sort of oil to use.

Frosting:

  • 15 ounces semi-sweet chocolate, finely chopped
  • 1 1/2 cups heavy cream


Cake:

  • 2 cups all-purpose unbleached flour
  • 1 1/2 teaspoons baking soda
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon salt
  • 12 tablespoons unsalted butter, at room temperature, plus more for the pans
  • 2 cups plus 2 tablespoons sugar
  • 3/4 cup nonalkalized cocoa powder (not Dutch-processed)
  • 2 teaspoons pure vanilla extract
  • 3 large eggs, at room temperature
  • 1 1/4 cups water
  • 1/4 cup milk

 

How to bake Devil's Food Cake

  1. Put the chocolate in a sizable heatproof bowl to prepare the frosting. Bring the cream to a boil in a little pan. Pour the cream over the chocolate and gently jiggle the bowl to allow it settle. For about 4 minutes, set the mixture aside till it softened. until smooth, whisk. Wrap plastic film across the frosting's surface. Allow to sit for about two hours at room temperature.
  2. Set a rack in the centre of the oven and heat it to 350 degrees F to prepare the cake. Two 9-inch round cake pans should be lightly buttered, and the bottoms should be lined with a circle of parchment or wax paper.
  3. Mix the flour, baking soda, baking powder, and salt in a medium bowl. Place aside.
  4. Beat the butter for two minutes at medium speed in a standing mixer with the paddle attachment. Slowly add the sugar while increasing the speed to medium-high. Beat continuously for 4 minutes or until smooth and light. After stopping the mixer, use a rubber spatula to clean the bowl's sides.
  5. Add the cocoa powder and vanilla, then beat for one further minute at medium speed. Then, with the mixer running at medium-low speed, add the eggs one at a time, beating for 1 minute between additions (stop the machine and scrape down the sides of the bowl once more, if necessary). Clean the bowl's sides with a scraper. Just bring the water and milk to a boil in a pot. Get rid of the heat.
  6. Add the flour mixture to the mixer at a low speed, about 1/4 cup at a time. Pour the heated liquid into the batter with caution. With a sizable rubber spatula, thoroughly combine the batter after removing the bowl from the mixer. Evenly distribute the batter among the prepared pans. To help the batter settle, gently drop each pan onto the surface.
    Place the pans on the oven's centre rack. Bake for 30 to 35 minutes, or until the centres of the cakes bounce back when lightly touched and the cakes start to peel away from the sides of the pans.
  7. The cakes should cool in their pans on a rack for ten minutes. Remove the cake layers from the pans and let them cool on a rack. (If you're not going to assemble the cake right away, wrap the layers in plastic wrap and keep them at room temperature for up to a day or in the freezer for up to two months.) Put the Devil's Food Cake together. On a cake stand or flat plate, place 1 cake layer upside-down. Place a third of the frosting on the layer's centre.
  8. Spread the icing evenly from the centre to the edges of the layer using a sizable offset spatula. Stack the second cake layer on top, rounded side up. Spread the remaining icing evenly over the top, letting any extra drip down the sides. The remainder of the icing should be applied on the cake's sides. The offset spatula's tip can be used to create a swirling design in the icing. Serve. For up to two days, store at room temperature under a cake dome or loosely covered in plastic wrap.
