  • 170g butter or margarine, plus extra for the tins
  • 170g caster sugar
  • 3 large eggs
  • 170g self-raising flour
  • 1 tbsp cooled instant coffee, dissolved in 1 tbsp hot water (add more if you like it stronger)

For the icing

  •  225g icing sugar
  • 100g butter or margarine
  • 1½ tbsp instant coffee, dissolved in 1 tbsp hot water
  • strawberry jam (optional)
  • walnuts or cherries, to decorate (optional)

 

How to bake Coffee cake

STEP 1

The oven should be heated to 180°C/160°F. Two 18 cm sandwich tins should be lined and buttered. In a bowl, combine the sugar and butter. Whisk until the mixture is light and fluffy.


STEP 2

With a fork, whisk the eggs in a small bowl before adding them gradually to the mixture, adding 1 tbsp of flour after each addition. After the eggs have been thoroughly incorporated into the mixture (but before using all the flour), add the remaining flour and gently fold it in.


STEP 3

While continuing to fold, add the dissolved coffee to the mixture. Divide the mixture into the sandwich tins, and bake for 25 to 30 minutes, or until the bread is firm and risen, and a spear put into the center comes out clean. After five minutes of cooling in the tin, put the baked goods out onto a wire rack to finish cooling. Currently, it is possible to freeze.


STEP 4

In the meantime, prepare the icing by mixing the butter and icing sugar until light and fluffy. Add the coffee that has been dissolved thereafter. Until the cake is ready to be iced, whisk, cover, and set aside.


STEP 5

If used, place strawberry jam on the bottom of one sponge and half of the frosting on the other. Put the sandwiches together, then top with the remaining frosting. Decorative walnuts or cherries are optional.
